The best salmon ever and grocery stores with toddlers

Today was yet another day that I questioned my sanity as I went to the grocery store 4 days before Christmas…. with a screaming toddler. Thankfully, I had an entourage to brave it with me, this consisted of my best friend, her 9 month old, and my boy, who’s 9. Crying babies always make for the best outings, people judge and you get to laugh when they do, because they have no idea that they’re actually being pretty good today. Unhappy kiddos are actually one reason why my best friend and I are both fans of braving the grocery store together. You see, our daughters are best friends, so, they keep each other occupied, also, it gives the both of us time to vent about mommy stuff. While we were there the 9 year old randomly requested Salmon for dinner… weird, but, I agreed because it wasn’t chick-fil-a or McDonald’s and it actually sounded pretty good. There was only one problem, I’ve never actually cooked salmon, I mean, I’ve watched my family cook it, but I never have myself. But, the ‘recipe’ I made up is absolutely AMAZING, and fairly easy. It almost made me forget the dishes in my sink, groceries STILL in the floor, and the screaming toddler in my living room…. almost. Here’s a plus for ya though, it’s baked with no oil or butter so it’s decently healthy, but, it also tastes amazing. It won’t change your life, but, for a second you’ll forget everything that’s wrong, because it’s that good. Enjoy!!

The absolute best salmon ever

Prep time: 10 mins

Cook time: 25-35 mins

Total time: 45 mins

Serves: 4+

Ingredients

1. 4 fresh (not frozen) Salmon filets

2. 3 tbsp Dijon mustard

3. 1 tbsp black pepper

4. 3 tsp coarse sea salt

5. 3 tsp garlic powder

6. 3 tsp onion powder

7. 2 fresh lemons, sliced thin (no end pieces)

Instructions

1. Place the salmon skin side down in a baking dish (I used the aluminum disposable one)

2. Sprinkle on pepper, garlic powder, onion powder, and salt

3. Put Dijon mustard on the salmon filets and spread with a basting brush

4. Place lemon slices on top and bake at 425 uncovered for 25-35 minutes

Notes

Spice measurements are approximate, I didn’t measure them or the Dijon.

The baking time varies on how done you want the salmon to be, I like mine to be more done, so the salmon pictured was baked approx 35-40 mins
