Oven Fried Chicken, comfort food without the guilt!

Yep, you read that right, OVEN FRIED CHICKEN! I know what you’re thinking- it’s not fried chicken if it’s cooked in the oven- and you’re right…. that’s where the no guilt part comes in. So, I’m gonna make a confession that’s borderline sinful in the south, I hate to fry chicken, like hate it. It’s messy, it makes my whole house smell weird and I will inevitably burn myself somehow. So when I finally got this recipe right I was SO excited!! The best part about this is it’s even crispier than actual fried chicken and it’s not greasy! I may have brought the guilt back into this dish though when I served it with mac and cheese but hey, it was the perfect meal when you need comfort food! My picky husband even loved this chicken, and that’s saying something! As always, my favorite thing about this recipe is the simplicity of it, hopefully you and your family love it just as much as we do! Sooo, y’all ready for this recipe?! Here goes:


Oven Fried Chicken



1. 1 pound chicken breasts or tenders

2. 1 cup cornmeal mix (the one with flour in it) if you can’t find the mix, use 1/2 cup of flour and 1/2 cup of cornmeal

3. 1 tbsp each of: granulated garlic, onion powder, salt, black pepper

4. 1 tsp cayenne pepper



1. Pre-heat oven to 425°f

2. Pour all spices and cornmeal mix into a gallon size ziplock bag, mix well

3. Add chicken to bag and shake well until all the chicken is coated with the mix

4. Place in baking dish and drizzle with olive oil

5. Bake for 35-45 minutes until outside is a golden brown and the inside is cooked through
