The PERFECT fall weather slow cooker pork roast

Y’all, it’s FINALLY fall!!! Fall is my absolute favorite season, I love the cooler weather, the leaves changing, the SLOW COOKER meals! LOVE IT ALL! Unfortunately, I live in the great state of Tennessee, which means, it isn’t consistently cool in the fall. That being said, I have been dying to bust out the instant pot and cook some comfort food, so, I made an executive decision that today was the day. My daughter, husband, and I haven’t felt the best the past few days due to our constant weather change and allergy season. We have all been in need of some serious comfort food and this is it. Now, first of all, y’all know I don’t do difficult meals. I didn’t do them before I was a mama and I certainly don’t do them now, point being, if it’s not easy, I don’t do it. That being said, my absolute favorite tool in my kitchen is hands down, my instant pot. If you have kids or are just busy in general, you can for real cook ANYTHING in this thing. Instant pots are a LIFESAVER, not to mention, they’re a slow cooker, pressure cooker, rice cooker, yogurt maker, and I’m almost certain there is an infinite list somewhere of everything this thing can do. I would like to disclaim that I’m not partnered with instant pot in any way, I just think they’re amazing and everyone should know about it!! Anyway, now that I’ve talked up my instant pot, let’s talk about this AMAZING pork roast. This pork roast has potatoes, onions, carrots, and this amazing sauce that just makes everything better. This meal is a curl up on the couch with a blanket and a bowl of this stuff while you watch your favorite movie kind of comfort food and, it’s even better with some homemade cornbread! I’m so excited to share this recipe with you guys, I hope you and your family enjoy it as much as we do!!

Easy Pork Roast

Ingredients:

1. 1/2 lb pork roast

2. 1 small yellow onion

3. 8-12 baby carrots

4. Small bag of baby potatoes (I used a medley pack that had yellow, red and purple ones from aldi)

5. 1 packet of Lipton Onion Mushroom Soup Mix

6. 1 tbsp minced garlic

7. 2 cups of water divided

8. 1-2 tbsp of salt (I use the pink salt, if you use regular table salt it will only take 1 tbsp)

Directions:

1. Pour one cup of water in the bottom of your slow cooker or instant pot, cut the onion in thick slices, cut the potatoes in half, leave the carrots whole and add all veggies into the bottom

2. Add the salt and garlic

3. Out the pork roast on top of the veggies

4. Use the other 1 cup of water to mix with the soup packet and pour over the top of the roast

5. If using an instant pot to cook, pressure cook on high pressure for 25 minutes

6. If using a slow cooker cook on high for 4 hours or low for 8

That’s it! I served mine with some brown gravy I made from a packet, but that’s totally optional! I hope y’all enjoy it as much as my family and I did!
