Chicken Florentine Pasta

Have y’all ever made up a ‘recipe’ that turned out really great and you really had to think about what all you put into it to make it good? Well, that’s exactly what this one was, and honestly, it was kind of random ingredients that I ended up putting into it. Before we get into the recipe though, let’s talk about how it’s finally summer…. and it’s rained almost every day for the past month! Being locked up in the house is NO fun, especially with a 2 year old who loves the pool and loves to be outside! Not to mention how difficult it is to grill out if it’s raining or if it’s humid from the rain. Anyway, if it’s been raining non stop where you live too, might I suggest this recipe, it’s a nice change from regular meals you’d cook indoors. If you’re anything like me, rotisserie chickens are your best friend when you want the flavor of a slow cooked meal but don’t necessarily have the time for it. Since this recipe only uses half of one, you can either make the other half a snack for you or your kids, (my daughter loves it) or you can save it and use it in another recipe. If you wanted to refrigerate or freeze it that is entirely up to you and your research, here’s some info on it if you want to try! If you have ever froze leftover rotisserie chicken that’s already been boned, let me know how it worked out for you! Now, here’s the recipe for this!

 

 

Chicken Florentine Pasta

Ingredients:

1/2 of a boned rotisserie chicken (you can use any flavor, I used a butter garlic flavor

2 tsp whipped cream cheese

1 tbsp of minced garlic

2 tsp salt

1 tsp black pepper

2 tsp of Italian seasoning

1 bag of baby spinach (washed)

16 oz bag of wide egg noodles

1/2 cup of shredded mozzarella cheese

1 box of salted chicken stock

1/3 cup heavy whipping cream

 

Instructions:

Cook the bag of pasta in the chicken stock according to package directions

Once cooked, add the spinach to the broth with the noodles

Add the garlic, heavy whipping cream, and cream cheese

Let the sauce cook down and thicken, add all the spices and the chicken

Stir in the mozzarella cheese and let simmer until thickened
